Hawaiian Sweet Potatoes

1 (29 oz) can sweet potatoes
1/2 stick butter
1 (8 oz) can crushed pineapples, undrained
1/4 c. packed brown sugar
2 medium bananas (barely ripe)
1/4 c. macadamia nuts, chopped

Peel and diagonally cut the bananas into 1/2-inch pieces. Drain sweet potatoes, reserving 1/4 cup of the liquid. Cut sweet potatoes into chunks. In a large skillet, melt butter over medium heat. Add sweet potatoes; cook and stir for about a minute. Add the reserved 1/4 cup of sweet potato liquid, crushed pineapple, and brown sugar; stirring to combine. Bring mixture to a boil; reduce heat. Simmer for 4-5 minutes until liquid thickens slightly. Add banana slices; heat through. Top with macadamia nuts.

Crabby Potatoes

This really could be considered a main dish or casserole on it's own. This is an extremely rich dish that was given to me by college roommate's mom -- who has since died.
1 lb. imitation crab meat
1 can cream of
chicken

1 pt. sour cream
1 lb. cheddar
cheese, shredded

1 pkg. hash browns,
shredded

1 1/2 c. butter, melted

Melt 1 cup of butter in bottom of 9 X 13" casserole dish Spread hash brown over the melted butter. Mix cream of chicken, crab meat, and sour cream together in a small bowl. Spread mixture over hash browns. Top with cheese. Melt the remaining butter and pour over the cheese. Bake at 350 degrees for 25 minutes.

Sausage Balls


3 c. Bisquick
1 pkg. Owens hot sausage, room temperature
1 pkg. Owens regular sausage, room temperature
3 c. cheddar cheese, shredded

Mix Bisquick and cheese in a (very) large bowl until well-blended. Work in the sausage (with your hands) until the mixture is well-blended. After blended, form into small/medium-sized balls and place on well greased cookie sheet (these do not rise). Bake at 350 degrees for 30-40 minutes until golden brown. These freeze beautifully.

Yields 2 cookie sheets

Salad Supreme

1 head lettuce (or less)
1 pkg. frozen English green peas, thawed
1/2 c. onion, chopped
1/2 c. green peppers, chopped
1/2 c. celery, chopped
1 small carton sour cream
3/4 c. mayo
10-12 oz. (1/2 moon) Longhorn cheese, shredded
Bacon pieces, crumbled

Layer in 9 X 13-inch dish: lettuce, peas, onion, green peppers, celery and bacon. Mix together: sour cream and mayo. Top with cheese. Chill and serve.

Spinach Madelene

2 pkgs.
frozen spinach, chopped

2 T. flour
1/2 c. Pet milk
1/2 c. reserved spinach liquid
3/4 t. garlic salt
Cayenne pepper to taste
6 oz. roll jalapeno cheese
2 T. butter
2 T. onion, chopped
3/4 t. celery salt
1/4 t. salt
1 t. Worcestershire

Cook and drain spinach; save the juice. Melt butter in pan; add flour. Stir until blended and smooth. Add spinach juice slowly and cook until thick and smooth. Add seasonings and cheese (cut in cubes). Stir until melted. Combine with spinach. Put in casserole dish and top with buttered crumbs. Chill for a couple of hours, the bake at 350 degrees for 20 minutes.
