Pizza Casserole

1 lb. ground beef
1 (3.5 oz) pkg. sliced pepperoni
1 (2.25 oz) can sliced ripe olives, drained
1 (14 oz) jar pizza sauce
1 (8 oz) pkg. Mozzarella cheese, shredded
3/4 c. Bisquick
1 c. milk
2 large eggs, lightly beaten

Brown the beef in a large skillet; drain. Stir in pepperoni and olives. Spoon into lightly greased 8-inch square baking dish. Top with sauce and cheese. Combine Bisquick, milk and eggs; stirring until smooth. Pour over cheese, spreading evenly. Bake, uncovered, at 400 degrees for 30-35 minutes or until golden brown. Let stand for 5 minutes before serving.

You could add green bell pepper if you like.

Monkey Bread

This is one of favorite goodies. I love Monkey Bread!

3/4 c. sugar + 1 c.
1/2 t. cinnamon + 1 1/2 t.
1/2 c. pecans
4 cans refrigerated biscuits
3/4 c. butter

Combine 3/4 cup sugar and 1/2 teaspoon cinnamon. Cut biscuits into four pieces and shake in sugar mixture. Place in greased bundt pan. Sprinkle pecans on top. In a small saucepan, combine 1 cup sugar, 1 1/2 teaspoon cinnamon, and 3/4 cup butter; bring to a boil. Pour over the top of biscuits and pecans. Bake at 350 degrees for 45 minutes.

King Ranch Chicken #1

This is a must have recipe for all Texans!


1/4 c. butter
12 flour tortillas, torn into pieces
1 medium onion, chopped
1 can cream of chicken
2 c. chicken, cooked & shredded
2 c. cheddar cheese, shredded
1 medium green bell pepper, chopped
1 can cream of mushroom
1 can Rotel tomatoes

In large saucepan, cook bell pepper and onion in melted butter until tender. Add soups, Rotel, and chicken; stirring until well-blended. In a 9 X 13" baking dish, alternately layer tortilla, soup mixture and cheese. Heat in oven until cheese melts.

Broccoli & Rice Casserole

1 (8 oz) jar cheese spread
3 (10 oz) pkg. frozen broccoli, thawed & drained
3 c. rice, cooked & cold
2 T. butter
1 onion, chopped
1 can cream of chicken
1/2 c. milk
1/2 c. almonds, chopped
1 small can mushrooms, sliced & drained

Combine rice and broccoli in casserole dish. In frying pan, melt butter. Add onion and saute. Add cream of chicken, milk, cheese spread, and mushrooms. Cook until well-blended. Pour over broccoli and rice. Bake, covered, at 350 degrees for 25 minutes. Remove cover, add almonds and bake an additional 15 minutes.

Party Sandwiches

12 Hawaiian rolls
12 slices ham
12 slices Swiss cheese
1/2 c. butter, melted
1/2 t. Worcestershire
1/2 T. poppy seeds
1 1/2 T. mustard
1 T. dried minced onion

Cut rolls in half and layer ham and cheese in center. Place in a 9 X 13" baking dish. Combine butter, Worcestershire, poppy seeds, mustard and onion in small bowl; pour over sandwiches. Cover with foil and chill for 8 hours or overnight. Bake, covered, at 350 degrees for 10 minutes. Uncover, and bake an additional 5-10 minutes.

Yields 12 sandwiches
